Stay at home is the new norm and in many states it’s going to be around for a while, but we’re not going to let that stand in our way of finding small reasons to celebrate! And when Cinco de Mayo falls on Taco Tuesday well that definitely deserves a celebration… and can I suggest a special cocktail for mom too!
As the owner of Sprinkles & Confetti party supplies, I always strive to make celebrating as easy as possible for all the hostesses we work with, but as a mom of two I completely understand that right now we’re all just seeking a way to keep things easy and fun for our families! Which is why I’m sharing my Cinco de Mayo plan that takes 30 minutes or less to prep!
FUN & EASY CINCO DE MAYO IN 3 STEPS
#1 Crockpot Taco Meat
Start your Taco Tuesday off right with this super easy pulled chicken taco meat. Our favorite go to recipe we printed years ago comes from Food.com “The Best Shredded Chicken” but the link is no longer available, so here’s what to do! It makes a ton so feel free to cut it in half or a quarter for single family dinner. Get the crockpot set and add:
1 16oz jar of your favorite salsa (needs to have some liquid to it)
2lb chicken breasts
2 serrano peppers, chopped
6 garlic gloves
1 packet taco seasoning (we skip this) and find the salsa gives it enough flavor
Let cook 8-10 hours depending on your crockpot, drain the liquid, and shred. Then top with your favorite taco toppings.
Or better yet, give yourself the night off to celebrate Cinco de Mayo and order in – support your favorite local Mexican restaurant by placing an order for takeout tacos!
Here’s our taco takeout spread from last year with a bigger crowd, but you get the idea for an easy cleanup & delicious dinner!
#2 Decorating Duty
Feeling a bit festive and want to decorate a little without going overboard! Check out our free printable Cinco De Mayo banner (download here) or have the kids art project of the day be cutting fun colorful flags out of construction paper or tissue paper you have around the house. Air fill any balloons you have laying around and string them up as a banner or tape them on the wall in a fun pattern! No need to have the perfect display simply create some family fun prepping for a festive taco celebration!
#3 Try a New Margarita
One of my personal favorites for summer is this Watermelon Margarita my girlfriend introduced me to last year, just 3 ingredients! That’s it!
All you need:
-Tequila
-Lime Juice
-Blended Watermelon
Star by cutting up your watermelon or buy it precut and throw it in the blender to juice (no energy for that – no problem – check your grocery delivery options for the new Simply Watermelon juice).
Once you have a nice juice, add your tequila & a squeeze of lime juice. Shake together and you have yourself a lovely refreshing drink! Salt the rim if you’d like and enjoy! Cheers!
